Ingredients:

  • 2 oz unsweetened chocolate (55g), at least 85% cocoa solids
  • 1 tablespoon super-fine almond flour
  • 2 oz unsalted butter, plus more for greasing ramekins
  • 2 eggs
  • 3.5 tablespoons powdered sweetener, or more depending on the chocolate you use

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Grease 2 ramekins with butter.
  3. Melt the chocolate and butter together in a saucepan over low heat, stirring until smooth.
  4. In a large bowl, beat the eggs until light and fluffy.
  5. Add the chocolate mixture to the eggs and whisk until combined.
  6. Stir in the almond flour and sweetener until well combined.
  7. Pour the batter into the prepared ramekins.
  8. Bake for 9 minutes, or until the top of the cakes is set but the center is still gooey.
  9. Let the cakes cool for a few minutes before serving.

Tips:

  • For a richer chocolate flavor, use a higher percentage of cocoa solids in your chocolate.
